Sambal Tuhau: Sabah local dishes

Tuhau is one of my favourite Sabah local food. You cannot find this food in other places beside Sabah, as what I know. Tuhau or E.coccinea is a local Sabah plant that is related to ginger family plant. What we need is its roots or stem. The roots have some insect smell known as "pesisang" in Sabah. Sorry, I don't know what is Tuhau and Pesisang in English. If any of you knew, please help me with the translation. Tuhau is famous among the native, Dusun that live in area like Keningau, Tambunan and Ranau.


When I walk around Kota Marudu tamu last Sunday, i saw this Tuhau roots and ready made preserved Tuhau. What I like about this ready made preserved tuhau, you can kept it for month. I don't need to make a mess in my kitchen just for preparing Tuhau. Just take out this preserved Tuhau in here and added some more ingredients to make Sambal Tuhau.


Normally people eat this while drinking montoku or rice whine. I don't drink montoku but I really like to eat my Sambal Tuhau with rice. Just add some Chili, red onion, belacan, lime juice, salt, sugar and a little bit of MSG (Mono Sodium Glutamate); you ready to eat them. If you can stand the smell. If you love this food, you most probably will not forget it taste.

Anyone of you eat Tuhau before? Will try to post my Sambal Tuhau Recipe next time. If this preserved Tuhau still in my mom kitchen when I go back to her house. Hahahaha....

Sorry Bel, cannot help you with the word Pesisang and Tuhau in English/Malay.
I just know that Pesisang is a kind of insect...

Haven't heard of tuhau but have had ikan sambal bilis. loved it!
